What do we need to make Daikon radish egg stir fry?

White radish is the main ingredient in this recipe. Any other radish can yield a result as good as the white one. Onion, chili, curry leaves, and cilantro are the fresh vegetables needed for this recipe. Mustard seed and oil are used for tempering. Adding eggs will result in the egg podimas/stir fry visually.

How to include radish in your recipe? Here’s the answer-Radish egg stir fry

Ingredients
  

  • 400 gm Radish big sized
  • 3 to 4 Eggs
  • 3 to 4 Green chillies based on your spice preference
  • Curry leaves
  • 2 Onions medium-sized
  • Oil
  • 1/2 to 4/3 tsp Mustard seeds
  • Salt as required

Instructions
 

  • Add oil in a pan.
  • When is oil is hot enough, add the mustard seeds.
  • Add the chopped onion after the mustard splutters. Cook for few minutes until the onion changes its colour into translucent.
  • Add the slited green chillies and cook for few minutes.
  • Meanwhile remove the skin of the radish and grate it.
  • Add the water along with the radish that came from the radish while grating.
  • Add salt.
  • Mix everything and cook well until the water evaporates.
  • Now add eggs.
  • Mix well until the egg coats and blends with the radish.
  • Cook in medium heat.
  • Cook until the radish,and egg mixture is fluffy and separate.
  • Add curry leaves.
  • Radish egg stir fry is ready now.
  • Garnish with cilatro and serve hot with rice or chapati

Notes

  • You can add more eggs if you prefer.
  • The same recipe can be used for purple radish or any other type of radishes.
  • Add curry leaves at the final stage to retain the aroma of curry leaves.
  • If you prefer a masala radish recipe, you can add curry powder, cumin powder or chilli powder.
