In a hot pan, add oil. Add onion and saute.
Next, add ginger-garlic paste and saute for few more minutes.
Add carrot and cook for a few minutes.
Next, add mushrooms along with enough salt, pepper and saute until the mushroom leaves the water.
Add grated cottage cheese and saute until the water evaporates.
Keep aside for cooling.
Meanwhile, flatten the bread slices using the palm or rolling pin.
Place half of the mozzarella single on one side of the bread slice. Keep the mushroom stuffing and roll it.
Do the same steps for the rest of the bread slices.
You can shallow fry these now.
For French toast
Beat the egg until frothy. Add milk and sugar and mix well until the sugar dissolves.
Grease the hot pan. Dip the bread rolls in the egg mixture and shallow fry.
