Easy Mexican rice and beans |one pot meal |tofu and vegetables

An easy one-pot Mexican rice and beans recipe loaded with vegetables,olives and beans.

Ingredients
  

  • Basmati rice- 1 1/2 cups
  • Bay leaf-1
  • carrot-1
  • Capsicum-1/2
  • Butter beans-1/2 cup
  • Peas-1/2 cup
  • Black olives-7
  • Tomatoes-2 puree
  • Salt
  • Smoked paprika-1/2 tsp
  • Chilli powder-1/2 tsp
  • Cumin Powder-1/2 tsp

Instructions
 

  • Add oil in a hot pan.
  • Add bay leaf and fry.
  • Add onion and fry until the colour of the onion becomes translucent.
  • Add butter beans.
  • Add chopped carrot.
  • Add peas and corn. Cook for few minutes.
  • Add chopped capsicum and fry.
  • Add tomato puree and cook.
  • Add cumin powder.
  • Wash and prep the rice to use. Keep aside.
  • Add chilli powder and mix well.
  • Add water.
  • Now add salt and bring it to boil.
  • Add rice and cover with a lid.
  • Add tofu when the water started to reduce.
  • Add chopped olives.
  • Cook covered until the rice is fluffy.
  • Mexican rice and beans is ready now.
  • Serve with rotisserie chicken and garlic cilantro dip.

Notes

  • Fry the washed basmati with less oil to get fluffy rice.
  • Add your favourite vegetables to make a hearty and healthy one-pot meal.
  • For homemade tomato puree, I used the blender to grind the tomato into a puree. You can use canned store-bought tomato puree.
  • Simple spices like chilli powder and cumin powders are used to spice up Mexican rice. You can play wild with your spice preferences.
