Easy Mexican rice and beans |one pot meal |tofu and vegetables
An easy one-pot Mexican rice and beans recipe loaded with vegetables,olives and beans.

Ingredients
Basmati rice- 1 1/2 cups
Bay leaf-1
carrot-1
Capsicum-1/2
Butter beans-1/2 cup
Peas-1/2 cup
Black olives-7
Tomatoes-2
puree
Salt
Smoked paprika-1/2 tsp
Chilli powder-1/2 tsp
Cumin Powder-1/2 tsp
Instructions
Add oil in a hot pan.
Add bay leaf and fry.
Add onion and fry until the colour of the onion becomes translucent.
Add butter beans.
Add chopped carrot.
Add peas and corn. Cook for few minutes.
Add chopped capsicum and fry.
Add tomato puree and cook.
Add cumin powder.
Wash and prep the rice to use. Keep aside.
Add chilli powder and mix well.
Add water.
Now add salt and bring it to boil.
Add rice and cover with a lid.
Add tofu when the water started to reduce.
Add chopped olives.
Cook covered until the rice is fluffy.
Mexican rice and beans is ready now.
Serve with rotisserie chicken and garlic cilantro dip.
Notes
Fry the washed basmati with less oil to get fluffy rice.
Add your favourite vegetables to make a hearty and healthy one-pot meal.
For homemade tomato puree, I used the blender to grind the tomato into a puree. You can use canned store-bought tomato puree.
Simple spices like chilli powder and cumin powders are used to spice up Mexican rice. You can play wild with your spice preferences.
