Morning breakfast time. If I don’t have any Idli, Dosa batter and didn’t preplan any breakfast and I don’t get any idea in the early morning rush…😓Then comes the store-bought bread into my blurred vision when I came out from my confused state. I don’t have a sweet tooth and that too for breakfast…So I decided to do something savoury.

The normal cheese recipes of mac and cheese and baked casserole won’t work on the breakfast table, and that too for my family. And I was looking for some simple ideas. I find some mushrooms, carrot and to my happiness find cottage cheese too. Kids will not say ‘no’ if the recipe includes mushroom and paneer. I feel relieved. I can finally breathe!

We can make cheese french toast in two ways like the normal french toast and a deep-fried version. French toast suits breakfast while bread rolls satisfy the fried cravings of energetic kids.

Kid friendly recipes

Red velvet yeast donut– A yeasted red velvet donut topped with chocolate glaze.

Energy bar– A healthy high energy bar made using oats,lotu seed,almonds and seeds.

Mango jelly– A simple kid’s favourite mango jelly made using fresh mango puree and agar-agar.

Pancake cereal | Mini pancakes– A Tiktok viral pancake cereal made with nutritious oats,wheat flour and finger millet flour.

Durian steamed muffin– A steamed muffin made using fresh durian pulp and cake flour.

Mushroom cheese french toast

A savoury french toast with the goodness of mushroom and cheese.

Equipment

  • Fry pan

Ingredients
  

  • 10 Bread slices
  • 8 Button mushroom
  • ½ to ¾ tsp Ginger garlic paste
  • 1 Carrot
  • 100 gm Cottage cheese /paneer
  • 5 singles Mozzarella cheese
  • Salt
  • ½ Chopped Onion medium-sized
  • Pepper
  • 2 Egg
  • ¼ cup Milk
  • 2 tsp Sugar

Instructions
 

  • In a hot pan, add oil. Add onion and saute.
  • Next, add ginger-garlic paste and saute for few more minutes.
  • Add carrot and cook for a few minutes.
  • Next, add mushrooms along with enough salt, pepper and saute until the mushroom leaves the water.
  • Add grated cottage cheese and saute until the water evaporates.
  • Keep aside for cooling.
  • Meanwhile, flatten the bread slices using the palm or rolling pin.
  • Place half of the mozzarella single on one side of the bread slice. Keep the mushroom stuffing and roll it.
  • Do the same steps for the rest of the bread slices.
  • You can shallow fry these now.
  • For French toast
  • Beat the egg until frothy. Add milk and sugar and mix well until the sugar dissolves.
  • Grease the hot pan. Dip the bread rolls in the egg mixture and shallow fry.

  • If you prefer the deep-fried version:
    • Egg-2
    • Bread crumbs-1 cup
    • Oil
  • Beat the egg. Dip the bread rolls in the beaten egg and roll them in the breadcrumbs until all sides are covered.
  • Deep fry them in the oil. Serve hot with tomato ketchup.

I tried only some of the cheese varieties as my kids are not fond of cheeses. To name some of the cheese varieties, there are Parmesan, Cheddar and Mozarella. I tried block cheese, grated cheese and cheese slices. What I realized is that grated cheese will spoil very quickly after the opening of the pack.

But block cheese will remain for a long time. And the cheese slices are handy (no need to grate) and a separate package of each slice will retain its life longer. Here I used cheddar cheese slices. You can trim off the sides of the bread if you prefer.

  • Eggs-2
  • Sugar-2 tsp
  • Milk-1/4 cup
  • Sweetened Cooking chocolate-1 cup grated

Instructions
 

  • Place the grated chocolate on one side of the bread slice. Close the bread slice by folding it.
  • Press the bread slice using the palm to seal the corners of the bread.
  • Meanwhile, beat the egg and add milk and sugar.
  • Now dip the bread slice in the egg mixture and place it in a greased hot pan. Cook both sides and serve hot simply or with chocolate sauce for extra chocolates.😉

Leftover bread slices can be used up in this way to make freezer-friendly snacks. The same recipe can be made in larger quantities by baking them in the oven.
